Well, for starters today most look at the kugel as a dessert, so why is it listed in the Benjies menu in the Deli Plates & Dairy Specialties? That is because in earlier times—say 800 years ago—it was considered a side dish due to it’s rather bland savory taste.
But you give people that many years trying to make it more sexy, you will get the conversion of a plain dish into a custard-like dessert. Who needs the next Top Chef to reinvent a traditional dish when this one has so many variations? (more…)
